So here's my advice, always start the game by playing on the easiest difficulty first to see if you can get the hang of it, then if you start to get better, play on the default or normal difficulty. However, I hadn't thought of just using a profile which is preset to have all missions available. You didn't address that specific issue, but I think you might be implying that I can't do it, which seems like a really stupid way for it to be implemented.
